Tonic – Sorbet
1 Lemon, untreated, peel thinly, juice squeezed out
1 Orange, untreated, peel thinly peeled
3 Sprigs of Rosemary
400ml Mediterranean Tonic
1 Egg white
Simmer Lemon and orange peel sugar and water and 3 sprigs of Rosemary in a Saucepan for about 20 minutes.
Pour the lauter Sugar through a fine sieve into a large Bowl and squeeze out the Citrus zest left in the sieve with a Spoon.
Add the Tonic Water, Lemon Juice and Orange Juice, and mix in the Egg Whites. Put in the Ice Cream Maker.
